Yogurt Raita

Ingredients:
Fat Free Plain Yogurt: 1 cup
Onion: 1 small finely chopped
Cucumber: Small chopped
Green Chillies: 2 finely chopped
Fresh Mint: 2 leaves finely chopped
Fresh Ground pepper: 1 teaspoon
Salt : to taste
Lemon Juice: 1 teaspoon

Method:
Add 1/2 cup water,onion, cucumber, chillies, fresh mint, salt to 1 cup Plain yogurt, mix well.Finally add Fresh ground pepper and lemon juice and mix well.
Serve after 15 minutes with any Rice.

Red Cabbage Fry

Ingredients:
Red cabbage: finely chopped ½ pound( cleaned and washed)
Onion(red or Spanish): 1 chopped
Green Chillies: 2 Coarsely chopped
Cummin seeds: 1 teaspoon
Salt: to taste
Olive oil: 1 Teaspoon
Coconut flakes unsweetened: 1 Teaspoon (optional)

Cooking Method:
Heat the fry pan under medium heat with 1 teaspoon of olive oil. Add green chilles, cummin and onion. Saute for few minutes till onion is light brown. Add chopped red cabbage and salt to taste. Reduce the heat and cook for 10 minutes with lid on. Fold it every 3 minutes. Add teaspoon of coconut flakes, fold it thru and cook it for 5 more minutes.

Serve HOT as a whole meal with Bread.

Brussel Spourts/Zuchinni Kuttu

Ingrediants:
Brussel Spourts : 4 Small size chopped
Zuchinni: 1/2 pound bite size cut
Green Chillies: 3 chopped
Yellow Lentils: 2 Teaspoon washed and soaked for 10 minutes
Chilli Powder: 1 Pinch
Olive Oil: 1 Teaspoon
Salt to taste

In the fry pan add 1 teaspoon of olive oil. Once it is heated up, add mustard, urad dhal. Once mustard popped, add Moong dhal, green chillies, spourts and zuchinni. Saute is 2 minutes and add salt to taste. Add 1 cup of water( moong dhal to cook) ,cook in low heat and lid on. Use the masher or the spatula to mash the veges. Add the pinch of chille powder and cook it in simmer.
Serve hot with rice and curd.

Mint Rice

Ingrediants:
Basmathi Rice: 1.5cups
Cummin: 1 teaspoon
Green Chilli: 3 chopped
Green peas: 1/2 cup( frozen or fresh)
Green Beans: 1/2 cup( frozen or fresh)
Tomato Paste: 1 teaspoon
Mint: 1/2 cup leaves
Cinnamon : 2 sticks(small)
Clove: 2
Olive oil: 2 teaspoon
Salt to taste

Cooking method:
Wash 1.5 cup of rice and soak for 15minutes. In a fry pan add 1 teaspoon of olive oil. Once the oil is hot add cinnamon and clove and fry for 2 minutes. Add this fried cinnamon/clove to soaked rice. Add crushed mint, cummin, Grean beans, peas, Green Chille, Tomato paste, olive oil and salt to rice. Add 2.5 cups of water ,stir and cook the rice in Rice cooker.
Once it is done(rice cooker stops) fluff it with a fork.
Serve HOT with Raita.
